View Full Version : Pumpkin Ice-Cream Pie...SUPERB!!!

This recipe has been such a favorite for the past 4 years. We have it on Thanksgiving and Christmas. It's simple, delicious, and satisfying! Try it out, and you'll never go back to plain pumpkin pie. Then again...pumpkin pie is pretty good!

1 cup plain canned pumpkin
1/4 cup sugar
1/4 tsp. cinnamon
1/4 tsp. ginger
Pinch of nutmeg (if desired)
1L vanilla ice-cream (Breyer's is the best!)
1 store bought graham cracker crumb pie crust

Instructions:

In a large bowl, mix together the canned pumpkin, sugar, cinnamon and ginger. Add the ice-cream and mash all the ingredients together. Work quickly so the ice-cream doesn't melt. Spoon the ice-cream mixture into the pie crust and smooth it with the back of the spoon. Put the pie in the freezer to harden. Freeze for at least an hour. Just before it is time to serve dessert, take the pie out of the freezer and if you want, decorate it with whipped cream and nuts.

I've been craving pumpkin pie for the past several weeks, but the voice of reason (aka the boyfriend) keeps telling me it's too hot out to be eating it. I think you just gave me a way to cure my summer jones for pumpkin pie!
