Here is my favorite Christmas cookie - this is my MIL's recipe - I have learned that the less you mess with/handle the dough (while rolling it out) the softer & fluffier the cookies.

Christmas Cut-Out Cookies - Jean
1 C. Shortening (Jean uses ½ C. margarine & ½ C. Crisco, or 1 C butter flavor Crisco)
2 C. Sugar
3 Eggs
1 C. Sour milk (1 C. milk minus 1 tsp. + 1 tsp. vinegar)
1 tsp. Baking Soda
4 tsp. Baking Powder
Pinch of salt
½ tsp. almond extract
5 C. flour

Works best if it is set in the fridge overnight. Roll ¼” thick & cut out. Bake 7-9 min. @ 350º.

Here is one of my favs. Good for any type of Holiday cookie cutouts...

Sour Cream Christmas Cookies
1 c. shortening
2 c. sugar
2 eggs (well beaten)
1 c. sour cream
1 tsp. vanilla
4 c. flour
1 tsp. baking soda
2 tsp. baking powder
1/2 tsp. salt

In a large bowl blend together shortening, sugar, eggs, vanilla, and 1/2 c. sour cream and 1/2 c. flour, baking soda and baking powder salt and the rest of the sour cream and flour. Chill dough for about 1 hr.
Roll out some cookie dough on a flour board a little at a time.
Use cookie cutters to cut out a design.
Add cutouts to a greased pan. Bake at 350 for 8-10 min.
These cookies are wonderful, I have been making them for years. I make my own powder sugar frosting, then add food coloring for various colors to decorate these as well as using sprinkles etc. You can also make these ahead of time, they freeze well. And still taste great.
