View Full Version : I need a recipe for pumpkin soup.

Hi guys! I am hoping to get a fairly simple but yummy recipe for Pumpkin Soup. I hate to just throw out my carved pumpkins when I could use them up. If any of you have a recipe you really enjoy will you send me a message or post it. Thanks so much!

Slow Cooker Pumpkin Soup
INGREDIENTS:
1 tablespoon olive oil
1 medium sugar pumpkin,
seeded and cubed
1 medium onion, chopped
3 cups chicken stock, or as
needed 1 sprig fresh rosemary
1 sprig fresh thyme
1 sprig fresh sage
2 small cinnamon sticks
2 bay leaves
1/2 cup heavy cream

DIRECTIONS:
1. Heat the olive oil in a large skillet over medium-high heat. Add pumpkin and onion; cook and stir until lightly browned. Transfer to a slow cooker. Pour in enough chicken broth to cover the pumpkin. Tie the rosemary, thyme, sage, cinnamon, and bay leaves into a piece of cheesecloth, and place in the slow cooker. Cover and cook on Low for 4 hours.
2. After 4 hours, remove the herb sachet. Stir in the cream, and puree the soup with a hand blender until smooth. Serve.

Pumpkin Soup
INGREDIENTS:
6 cups chicken stock
1 1/2 teaspoons salt
3 1/2 cups cubed fresh
pumpkin
1 teaspoon fresh parsley
1 cup chopped onion 1/2 teaspoon chopped fresh
thyme
1 clove garlic, minced
1/2 cup heavy whipping cream
5 whole black peppercorns

DIRECTIONS:
1. Cut pumpkin into 1/2-inch cubes.
2. Heat stock, salt, pumpkin, onion, thyme, garlic, and peppercorns. Bring to a boil, reduce heat to low, and simmer for 30 minutes uncovered.
3. Puree the soup in small batches (1 cup at a time) using a food processor or blender.
4. Return to pan and bring to a boil again. Reduce heat to low and simmer for another 30 minutes, uncovered. Stir in heavy cream. Pour into soup bowls and garnish with fresh parsley.

That sounds great - I'll give that a try.

The only soup I've ever made (my other half is the chef in the house) is Chestnut and Apple, which we have as a starter before the turkey. That's good too!

How about a Pumpkin-Vegetable soup

1 large onion
2 tablespoons butter
4 cups reduced-sodium chicken or vegetable broth
2 medium potatoes, peeled and cubed
2 large carrots and 2 celery ribs, chopped
1 cup cooked fresh or frozen lima beans
1 cup fresh or frozen corn
1 can (15 oz) solid packed pumpkin
1/2 teaspoon salt
1/4 teaspoon each white pepper and ground nutmeg

In a large saucepan, saute onion in butter until tender. Add the broth and veggies. Bring to a boil. Reduce heat; cover and simmer for 25 - 30 minutes or until veggies are tender. Stir in the pumpkin, salt, pepper and nutmeg. Cook 5 - 10 minutes longer or until heated through. 7 servings

Well I never made the soup. After speaking with a client she had a vegetarian cookbook for Pumpkin-Cashew stirfry...it was delicious to say the least. Will do the pumkin soup hopefully next year.
