Does anyone else do double turkeys? One for Thanksgiving and one for Christmas? It looks like we have our hands full of turkey this year; we are actually doing 2 for Thanksgiving, and again one for Christmas!

We always do. I love turkey.
I already have my turkey for thanksgiving and I plan on stopping at the store tonight to get a turkey for christmas.

I LOVE turkey! We always do turkey at both Thanksgiving and Christmas (we do ham on Easter). Which suits me just fine since I really dislike ham.

This year we're doing two Thanksgivings, one on Thursday and one on Friday, so that's two birds I get to cook plus the practice one this week.
Christmas will be ham, though.

My family only has turkey on Thanksgiving (smokehouse spaghetti on Christmas) but sometimes my MIL makes turkey for Christmas, along with ham. I can't hardly wait! :)

Oh my do we eat!!! We have Thanksgiving dinner/lunch over at my parents' house...but no turkey there. They are all vegetarian. Then we have Thanksgiving dinner with my in-laws with PLENTY of turkey!!
Christmas is the exact repeat (dinnner-wise) as Thanksgiving. We end up eating a whole lot of food!! LOLcheesy

:grin:I usually do turkey for Christmas and Thanksgiving too...I love turkey. And usually make another one or two throughout the year.

Only feed 4 people on Thanksgiving so we only have a Turkey Breast but on Christmas, my aunt cook a huge Turkey for about 25 people.

I will be having approx. 6 adults and 1 child for Thanksgiving, and probably just a few at Christmas. Although I really love big get togethers.

I dream of turkey dinners -- real ones -- I'm always in a restaurant on Thanksgiving and Christmas... so the selection isn't all that terrific...

We have turkey and ham for both holidays. (Large family) And I never get tired of them. A couple of times we've gone with something else and were always disappointed.

We are breaking tradition and trying a new recipe on one of the two turkey's. Has anyone tried the high heat recipe? We got it from Safeway, it's called the "2-hour Turkey" recipe. You cook it at 475 for 2 hours and taa-daaa.... Has anyone had experience with this recipe before or heard about it?

I haven't tried that recipe, but I guess it's of sound principle. I like Alton Brown's method. Start the turkey off in a 500° oven for 30 minutes, and then finish it off at 350°. It gets pulled when the bird hits 160° internal temp if memory serves. He also puts a piece of canola oiled aluminum foil on the breast only after the first half hour as extra insurance against drying out the white meat. I've used that method for a few years now and it, in conjunction with brining, always produces a nicely colored, seasoned, and moist bird.

Cool, so you have found the high heat recipe sucessful. I am looking forward to trying this recipe. Our boss who will be trying it for the 2nd year this year says the skin comes out a great color and is nice and crispy. He says it's not dry either.
How long does the method you use from A. Brown usually take you? Do you have a lot of left overs?
