Gluten Free Flour Blend
To those who are gluten free due to allergies or intolerant to it here is a good gluten free flour blend to make. I have tried many that do not have a good texture after baking, either too dry or spongy texture. This blend is the best I have found.
You can use this blend to substitute in any recipe that calls for flour. I have an allergy to gluten and have been baking cookies, muffins and more and the rest of my family cannot tell the difference from regular flour.
Gluten Free Flour Mix:
Mix these ingredients together
1 1/2 cups white rice flour
1 1/2 cups sorghum flour
1/2 cup tapioca starch
4 tsp. baking powder
2 tsp. xanthan gum
Mix these ingredients together and scoop however much needed from this for your recipe. I like to triple the amount and store to have on hand for any recipe that calls for flour.
You might have to go to a natural food stores to find these ingredients. I found these ingredients at Whole Foods and Natural Grocers.

This is the best gluten free flour blend I have ever tried! I just made peanut butter cookies with it yesterday. My 3 grandchildren loved them and did not notice anything different.
No need to search for specific "gluten free" recipes, just use any recipe and substitute the flour for this blend.
The local Amish store in my area has all the ingredients you have listed, too. Thank you for posting the recipe, CAH!
