1cup cole slaw mix (you can buy the pre packaged bags look for a bag 8 oz or more)
1 cup sliced mushrooms
1/2 cup thinly sliced zucchini
1/2 cup thinly sliced yellow squash
3/4 cup canned black beans (or the kind you like), drained and rinsed
1/8 tsp salt
1/8 tsp pepper
1/2 tsp basil
1/4 tsp thyme
1/4 tsp garlic powder
1/4 tsp onion powder
1/2 tsp Oregano
1 tbsp I cannot believe it is not butter (light)
1/2 cup whole wheat flour (or white flour)
1/2 cup skim milk
2 eggs, beaten (or 1/2 cup egg substitute)
1/2 cup shredded Provolone cheese (or a sharp cheese you like i.e. Asiago, Smoked Gouda, or Cheddar Cheese)
Cooking Spray (any kind)
Coat a large frying pan with cooking spray; heat pan over a medium-high heat until hot. Add slaw mix, mushrooms, zucchini, and squash. Sauté about 10 minutes or until vegetables are tender, stirring frequently.
Stir in beans and next 6 ingredients. Remove from heat and keep warm.
Coat a 9-inch pie plate with cooking spray; add I cannot believe it is not butter.
Bake at 425°F for 1 minute or until butter melts. Combine flour, milk, and eggs in a medium bowl; stir well with wire whisk. Pour mixture into prepared pie plate (do not stir).
Bake at 425°F for 15 to 20 minutes or until puffed and browned. Spoon vegetable mixture into shell; sprinkle with cheese.
Bake 1 to 2 minutes or until cheese melts.
