Christmas Ball 1 Cream Cheese Snowball Cookies

Cream Cheese Snowball Cookies (makes 24 cookies)

INGREDIENTS:
1 cup confectioners’ sugar
1/2 cup finely-chopped almonds/walnuts/pecans/macadam nuts (or another nut you prefer – you can add two tbsp of coconuts too)
1/2 cup vegetable shortening
1/2 cup butter (softened)
1/2 cup cream cheese (softened)
1/2 cup white sugar
1/2 teaspoon almond extract (or rum/or lemon/if you plan on using coconut you can use that extract if you wanted)
1/2 teaspoon vanilla extract
1 1/2 cups all-purpose flour

DIRECTIONS:
1. Preheat oven to 350 degrees.
2. Sift the confectioners' sugar into a bowl, stir in the nuts you want set aside (also if you are going to use coconut add that now too).
3. Beat together the shortening, butter, cream cheese, and sugar together in a bowl until the mixture is creamy and thoroughly blended. Mix in the almond (or flavor you want) extract and vanilla extract.
4. Once the wet ingredients above or thoroughly combined add flour a little at a time (I use a small scooper); mix low to medium.
5. Scoop up dough by rounded tablespoon roll it into balls about 1 inch.
6. Place the balls about 1 1/2 inches apart on ungreased baking sheets.
7. Bake in the preheated oven until the cookies turn slightly golden at the edges, about 6-7 minutes.
8. Let the cookies cool on the baking sheets for about 1 minute, but no more they need to be warm so the sugar mixture sticks to them; roll in the confectioners' sugar -nut (& optional coconut) mixture while still warm.
9. Eat and enjoy around your Christmas Tree.

Bakers Notes:
• I have used low fat cream cheese with this recipe I never noticed a taste difference – nether did anyone at the Church Christmas Party (I let the Pastor know – he said this was an OK dup!!!)
• I have used I Cannot Believe It Is Not Butter Baking Sticks and they turned out lovely
• NEVER use whipped cream cheese (too much air)
