Christmas Ball 3 Salisbury steak & sauce (lighter & healthier)

Salisbury steak & sauce

INGREDIENTS:
1 lbs lean ground chicken/turkey/ or beef (try to find very lean like 90% or above)
1 cup finely diced red bell pepper
1/2 cup chopped onions
1/2 cup chopped mushrooms (I use baby bella)
1 egg white (medium to large size egg) (or two tbsp of egg substitute)
1/2 tsp pepper
1/2 tsp salt
1/2 tsp horseradish
Cooking Spray

DIRECTIONS:
Place oven rack in upper third of oven; preheat the broiler on high. Coat a broiler pan and rack with cooking spray
In a small bowl mix egg white, pepper, salt, & horseradish together
In large bowl mix ground chicken/turkey/beef, red pepper, onions, mushrooms, add egg mixture to this and incorporate all ingredients completely
Form into four (4) oblong patties and place on broiler pan, spray each patty with a little cooking spray
Broil on high four to five minutes per side

I like to make a beef sauce but a healthy type to pour/serve over the patties

Quick Red Wine Beef Sauce
Ingredients:
  • 1/4 cup chicken broth (or beef broth)
  • 1/4 cup red wine (any kind if you do not have any in the house you can use balsamic vinegar too)
  • 1 tsp Dijon mustard (or a spicy mustard will do)
  • 1 tbsp unsalted I cannot believe it is not butter (or regular butter)
  • 1 tsp fresh thyme (or ˝ a tsp of dried thyme)
Directions:
Spray pan with cooking spray and add the broth and red wine and reduce over high heat by half (1/4 cup). Whisk in the I cannot believe it is butter stir well when it is melted add the mustard and thyme, it is now ready to serve/pour over your patties.
I may even cut up a little extra red peppers and mushroom too for garnish.
