23 16x16 Christmas Morning Muffins

Christmas Morning Muffins

Ingredients:

2 cups unbleached flour
1/2 cup wheat germ
1 tsp ground cardamom
1 tsp salt
1/2 cup sugar
4 tsp baking powder
1 tsp baking soda
1/2 cup chopped walnuts (you can use another type of nut)
1/2 cup raisins
1 cup mixed glazed fruit – this is an old recipe so I just buy & use dried fruits that I like ie. Cranberries/blueberries/cherries whatever you like
2 eggs
1 cup buttermilk
1/2 cup butter, melted

Directions:

Combine all dry ingredients
Whisk together, eggs, buttermilk and melted butter.
I use an electric mixer (on medium to low) and slowly add to dry ingredients to egg mixture
Spoon in to greased muffin tins – I actually use the paper/wax liners this way it is easier to clean
Bake 375 for 20 minutes
This makes 18 regular sized or 12 jumbo muffins.



Serve with room temp butter and jams or Honey Butter see recipe below.

Honey Butter

Ingredients:

1/2 cup butter, softened
1/2 cup confection sugar
1/2 cup honey
(You can also add 1 tsp ground cinnamon and/or a tsp of vanilla for different flavors)

Directions:

In a medium bowl, combine butter, confection sugar, and honey (if you are using cinnamon or vanilla add that too).
Beat until light and fluffy. (I use my electric mixture on medium to high)

This is a very old recipe. Hope you enjoy it.
