English Christmas Punch

English Christmas Punch


Ingredients:

750 ML bottle dark rum
750 ML bottle dry red wine
3 cups strong tea (black – Earl Grey/Irish Breakfast)
1 lb superfine sugar (It is called castor (or caster) sugar in Britain/ It is not as fine as confectioner’s sugar, which has been crushed mechanically so DO NOT use it as a substitute (take it from me I tried) If you fail in your search and your local store wouldn’t recognize customer service if they tripped over it, you can make your own superfine sugar by running granulated sugar in a food processor or blender until powdery. After you turn it off, let the powder settle for a minute before you open the food processor. )
Juice of 1 large orange (or ¼ to a ½ of a cup)
Juice of 1 lemon (or 2 tbsp)

Directions:

Heat, but do not allow to boil, the wine, tea, lemon and orange juices in a saucepan
Pour the heated mix into a heat proof punch bowl.
Place as much sugar as possible into a large flame proof ladle and any excess sugar pour directly into the punch bowl.
Saturate the sugar in the ladle with rum.
Ignite the rum and sugar in the ladle and pour it while still aflame into the punch.
Stir well and extinguish the flames.
Pour the remainder of the rum into the punch.
Stir well.

If you want to do this for your guests it is a real crowd pleaser.
