tree Taste Brown Rice

Taste Brown Rice

2 cups water (or low fat chicken, veggie or beef broth)
1 cup brown rice

1 small diced onion (by small I mean no larger than your fist)
1/2 cup diced celery
1/4 cup dried cranberries (or cherries/or blueberries)
1/2 cup balsamic vinegar
1 tbsp. brown sugar

Cooking Spray

Bring water or broth to a boil in a pot
Stir in rice, cover, and reduce heat to low.
Simmer for 45 to 55 minutes, or until done. (Or according to the package you purchased)
In a pan spray sided and bottom and sauté onion, celery – cook until tender – add vinegar and sugar over low heat stir until sugar dissolves – take off heat.


Once rice is done stir in onion, celery, & vinegar mixture
Then add cranberries (or dried fruit you like)
Cover & serve
This is also good to refrigerate, and serve cold

Being vegetarian, I can certainly eat this! It's also wheat/gluten free. That would be great for Thanksgiving. I am most definitely going to try it! =)

C-A-H... I should pull some of my other ones out my GF is a vegetarian and she has some nice ones, she went that route because her daughter cannot eat anything with gluten, and well after she did some research she thought it would be a good life style - she has never looked back. I am sure you have lots but it never is bad to share and maybe I should give this to the recipe cook book for other to have on their vegetarian table. I had no idea how good this recipe was (tee hee - play on words no!!!!) I should also give it to my GF!!! Wow see you do learn something everyday!!! I had needed a rice dish once and well this is what I had on had, sometime I toss in carrots if I feel frisky!!! Tee Hee
