Mini Pumpkin Cheesecake
(makes 1 dozen)
Crust: This is optional I have also used Reduced Fat Vanilla Wafers
1 cup cookie crumbs (ginger snaps, graham crackers, even plain sugar cookies)
1 tsp finely diced candied ginger (or real ginger)
2 tbsp of any combination of the following spices:
cinnamon, nutmeg, ginger, allspice
a pinch of pepper (not a misprint)
2 tbsp melted Smart Balance Light Butter
2 tbsp ground date sugar
Preheat oven to 325 degrees
Line a muffin tin with paper liners. I use the ones with the foil.
Mix everything together.
Press about a tablespoon of the mixture into the paper liners (I use the ones with foil)
Bake the crusts for about 8-10 minutes.
Let cool while preparing the filling.
Lower the oven temperature to 300 degrees.
8oz room temperature Neufchatel cream cheese (I use all different brands)
1/2 cups egg substitute
2/3 cup of pumpkin. (You can go up to 3/4 of a cup)
1 tsp vanilla
1 tbsp of each of the following spices, add them all together in a little dish and mix:
cinnamon, nutmeg, allspice, ginger. (or just use pumpkin pie spice but you will need two tbsp)
1/8 tsp of salt
1/2 cup of ground date sugar (do not dissolve in water, I know most recipes say to do that but when I 1st made this I didn’t know that and mixed it right is as is and it comes out very nice) Sometimes I use Splenda as well.
2 tbsp of molasses
Cream the Neufchatel cream cheese and date sugar together.
Add in ¼ of the egg substitute at a time, waiting until each portion is fully incorporated.
Add in vanilla and molasses and beat on medium speed.
Then add in the pumpkin, salt, and the spices, beat on low speed.
Just add a little of the mixture to each crust (or Wafers) until you've used it all up.
Bake for 25-30 minutes. Let cool, then chill in the fridge for at least a few hours. Top with homemade Neufchatel cream cheese topping or light whip cream
Light Cream Cheese Frosting Ingredients
- 8 ounces Philadelphia Neufchatel (1/3 less fat) cream cheese, softened but still cool
- 1 teaspoon vanilla
- ¾ cup Splenda sugar
- Beat all together until creamy on medium to high
