We usually get some breakfast sausage or bacon from a local meat market (where I get my Christmas ham) and I make cinnamon rolls. I typically make dough on Christmas rather than pre-made or tube pastries, but I know that other people do a lot more and sometimes a lot less. It all depends on your taste and how much time you want to invest in making breakfast.

I have to add that when I was a kid, my dad and I had a Christmas Eve tradition for several years in which we'd have breakfast at the Waffle House. Afterward we'd head out for some last minute shopping, and the employees at Waffle House always seemed to be cheery on the day before Christmas. We kept the tradition alive for the first year or two after I was married, but after adding a kid or two I had obligations at home that kept me away from my greasy spoon Christmas Eve breakfast.

how about a breakfast casserole? thats what I'm thinking of having this year. Most of them can be made ahead of time so all you have to do Christmas morning is throw it in the oven. There's all kinds out there some made with hash browns and others with bread so probaly the best way is to google recipes and find one that sounds good to you

We do cinnamon rolls. I prefer to make them home made but I cheat some times and buy the frozen ones.

We usually do a coffee cake of some type too.

we have always done raisin bread, hand made by my mom with cheese's cold cuts and jams. But mom being elderly and her hands not so good anymore can no longer make it so we are going to change things this year and make a new tradition.
I want to do a breakfast casserole too.I have a blueberry baked french toast we all like and am going to look up one made with eggs and sausage or bacon.

cinnamon rolls (christmas tree shape) go in first thing in the morning..that way when we are done unwrapping we usually have a few with hot chocolate/coffee

we then do a bigger brunch
spinach egg strata (from annie's eats)
so gooood, we use swiss instead of gouda and add roasted red peppers
hash brown casserole
fruit salad
