Pineapple Souffle

I tried a new recipe today for a cook out that was a HUGE hit....give it a try sometime! It's from a dinner club in Dayton Ohio, famous for their sweet potato souffle, only this is their pineapple souffle! It was delish:
http://www.lacomedia.com/pineapple_souffle_recipe.htm

La Comedia's Pineapple Soufflé Recipe

1/4 cup butter (melted in pan)

MIX TOGETHER:

1 1/2 cups sugar
3 eggs, beaten
1 large can of Pineapple (drained)
3 slices of bread (cubed)
1/4 cup milk

Pour into baking dish with melted butter. Sprinkle with cinnamon, 1 Tbsp. sugar. Bake at 350° for 40 minutes.

Mmmmmmm, sounds delish. I grew up in Dayton and have gone to LaComedia a few times, but I don't think I've ever had that. Do remember the sweet potato souffle, though. Yummy.

That sounds good! I have eaten pineapple casserole before made by someone else, and I believe it had cheddar cheese in it? Anyhow...it was really good and tasted more like a dessert than a side dish!
